It's no secret that Christmas cookies are among the most popular holiday treats to make. If you're looking for some other Christmas desserts to add to your sweet spread this year, try one of these Rawleigh-inspired recipes made with our unique, delicious, and simple pie mixes.

Trifles are a decadent dessert with a variety of flavors and textures. They are both visually appealing and delicious to eat. This Trifle with Strawberries and Lemon Pudding is no exception. It begins with a layer of buttery pound cake, then a layer of strawberry sauce and fresh strawberries, and finally, a layer of tangy and smooth lemon curd tempered by a layer of softly whipped cream. The flavors of each layer are distinct if you eat this Strawberry and Lemon Curd Trifle right away. 

Rawleigh Lemon Pie filling and dessert mix will undoubtedly make this trifle a favorite.

In a stand mixer fitted with a whisk attachment, combine the cream, powdered sugar, 1 12-ounce amaretto, and vanilla extract. Start the mixer on medium speed to prevent the cream from splattering. Increase the speed gradually to medium-high and whip until the cream forms soft peaks. Place aside.

Whisk together 7 tbsp (105 ml) of mix 1 cup + 1 tbsp (250 mL 15 mL) of sugar, 2-1/2 cups (625 ml) of milk or water, and 2 egg yolks beaten until smooth. Cook over medium heat until thick, stirring constantly. 

Combine the sliced strawberries, sugar, remaining amaretto, and lemon zest in a mixing bowl. Set aside after thoroughly mixing.

To make the trifle, start by layering 13 angel food cake cubes on the bottom of the trifle bowl. Place 13 of the lemon curd on top. 13 strawberries should be added. Top with a thick layer of whipped cream. Repeat with single layers of cake, curd, strawberries, and whipped cream two more times. 

Garnish with strawberries and lemon zest, if desired.
