Coconut pudding with Rawleigh's Coconut Pie Filling and Dessert Mix

Coconut pudding- rich, creamy, and luscious dessert made with coconut milk. A coconut pudding is extremely simple to make in one pan with minimal ingredients and whips up quickly. Serve coconut pudding to your friends and family this Christmas, made quick and easy with the help of Rawleigh Coconut pie filling and dessert mix.
To prepare the pudding:
Whisk together 7 tbsp (100 ml) of mix with 2/3 cup (150 ml) of sugar, 1/2 cup (120 mL) of milk, and 1 egg yolk beaten (optional) until smooth.
Add 1-1/2 cups (375 ml) of milk. Cook over medium heat, stirring constantly, until thick. Pour filling into a 9-inch pie crust or in individual serving cups and refrigerate.
The whole container prepares approximately 6x9 pies or 32 x 1/2 cups (125 mL) of pudding.
Garnish with a few chopped almonds and desiccated coconut and enjoy this delicious coconut pudding!
